Erin's Simple Tahini-Free Hummus


Confession: For several years I was absolutely addicted to Tribe Hummus. I gave that company a small fortune of my hard-earned dollars. I wish I'd known that hummus was so easy to make. This stuff is bangin'. I've received rave reviews of this hummus from both my meat-eating and vegetarian friends and there has never been any left over to take home at the end of the party.

Easy Breakfast Potatoes


These breakfast potatoes are so easy and flexible that I hesitate to even call this a recipe (but I will!). They're my morning go-to when I just want to get some potatoes in my face as quickly as possible without too much fuss. They're cooked in olive oil rather than butter, these potatoes are vegan by default. Mmm.

You can use any kind of potatoes you want, including sweet potatoes. You can also use whatever seasoning you want. I've tried Season-All, red pepper, garlic powder, etc. This time I used taco seasoning and it was delicious. Did I say flexible? What I meant was just throw whatever the heck you want in there.
